Cook & Serve
Kitchens within restaurants represent standard kitchens with thermal equipment (kettles, food storage containers and steam-convection oven) and smaller-capacity chilling devices.
Finished meals are prepared from fresh foodstuff delivered from the Central Kitchen Warehouse with previously performed receipt control of foodstuff according to the HACCP standard.
After receipt of foodstuff, thermal processing is performed and finished meals are put in inox containers which are placed on hot food tables of food distribution lines. In this manner, customers obtain fresh and warm food regardless of the period when they decide to visit the restaurant from the moment of food preparation
Cook – Chill – Cold Transport – Cook Finishing – Serve
According to the state-of-the-art cook & chill technology, finished meals are thermally processed whereby thermal processing is discontinued before
